Sweet Breads & Muffins

Why do we call it a "sweet bread"? Although it is in the sweets family and shares some similarity to bread texture, it's not as decadent as a cake nor as plain as a bread. This one’s a tropical paradise and my newest of gluten-free sweet breads. I call it my “tantalizing tropical paradise sweet bread”. What do you get when you mix fresh banana, pineapple and pear, unsweetened coconut flecks, and a generous pinch of sweet cinnamon that is finished off with not one but two drizzles (tropical drizzle of mango, papaya, guava, peach & passion fruit) and topped off with white chocolate drizzle and buttercream button– a winning combination for a sweet bread that is just right in texture and sweetness. It’s plain enough to serve at brunch or an afternoon tea or fancy enough to serve as a dessert with a dollop of your favorite ice cream atop.
