So what makes bread so special? There's just something special that happens when you bite into a warm roll or slice of bread and slather it with a warm GF bruschetta, French butter with sea salt, honey, homemade jam or your choice of schmear) as it truly is an experience worth repeating over and over!

Sweetopia® has finally tiptoed into the world of yeasted breads and is smitten with the challenge of making gluten-free, nut-free, preservative-free & dye-free bread and rolls that are texturally excellent and with just the right balance of taste where you know it's a roll made with yeast but it doesn't knock you over the head with it. Moreover, the roll and bread need to hold up in a frozen state and thawed where you can't tell the roll was ever frozen. Thus far, I have succeeded in all these requirements and have rolled out 2 excellent dinner roll and bread varieties: one has a little honey (baking and cooking honey that is True Sourced and Certified) added in it and milk, and the other no milk or honey added. Both varieties are quite good with the one without the honey has a wee bit more detectable yeast flavor (which is nice) and a slightly less dense texture (neither are super dense nor are they crumbly or "pilly" as what is commonly referred to customers that have purchased the available GF breads/rolls that are sold in the marketplace and little whiter in color due to the void of honey that tends to be a rich caramel color. Both the breads and the rolls freeze well and thaw well without any detectable taste the item had been previously frozen nor any change in the bread/rolls original texture. This is huge!

I am only beginning on this journey but indicators are it's going to be an exciting one with trials, some bombs (because I am insatiably curious and love to experiment) and then fabulous results that are worth duplicating! I don't totally understand at this juncture in my baking experience with yeast the science behind it and all the takes place in the baking process but the challenge of producing a great end result has me hooked to master it. So if you will, come along with me on this journey and give my latest rolls and bread a try. I think you'll be pleased and more than pleasantly surprised. Rolls are sold in 1/2 dozen and are good sized (~ 3" round at top and 2" round at bottom); Whole loaf breads are currently sold in 6" size and yield 9 to 10 slices. NOTE: I will be ramping up my inventory of the rolls and breads for available sale. For now, I need 4 business days notice from time of order.
