Convivial Coconut Sweet Bread

This lusciously light and moist all natural, GF & nut-free sweet bread is wonderfully balanced with just the right amount of dessicated "unsweet" coconut flecks, splash of real vanilla, a hint of fresh lime zest and topped with a wee dusting of rough sugar crystals. Not over powering at all on the coconut front. Great to serve at breakfast, tea or coffee time, brunch and yes, even for dessert with a heavenly drizzle of fresh seedless raspberry reduction.
