Today and more than ever, consumers have become more conscious about their food choices and how to balance those choices where sweets don’t have to be entirely eliminated from one’s dietary plan but rather indulged with a focus on more portion control and overall, better quality of ingredients. This is my first success story on the sugar-free and gluten-free sweet test where the cake texturally matches very closely to it's gluten-free but made with sugar, sibling. The cake as far as sweetness goes, is not as sweet but nonetheless tasty. The sugar-free cocoa ganache topping provides the majority of the sweet taste but not overboard on the sweetness. You may elect to have it without the ganache, if you prefer. Or, give the vanilla sugar-free drizzle, a try.
In this fierce competitive marketplace where a plethora of products abound, often times the core focus is anything but on authentic quality of those products but instead on the “bottom line”. This brings up a story that was shared to me some many years ago but still rings true today, sadly to say. A salesman went to his manager and told him that he tried the food product he was selling and said it was terrible. The manager responded “I didn’t ask you to like the product. Each one has been carefully and purposely created with the highest quality of ingredients throughout the recipe. The quality of the ingredients has a direct correlation to the end product, texturally and taste-wise and especially critical when you are making sweets that are gluten-free. I “like” all of my creative GF, and nut-free creations and routinely enjoy them with family and friends, (whom are also not gluten-intolerant) and where they continue to pass the “can’t believe these are gluten-free” test. They are truly inimitable……incomparable…..and imaginative!
