Vividly Vanilla Lemon Lavender Cupcakes (VEGAN)

Lavender is in the mint and basil herb family and packs a lot of healthy benefits. While lavender (lavender oil) is most commonly used in aromatherapy to reduce stress, anxiety, insomnia, it is believed to have antiseptic and anti-inflammatory properties. When used in food (extract or oil form), moderation is key as a little goes a long way. So, blending it with other extracts and flavors works well, especially those in the citrus family.

These medium textured and moist GF, nut-free, preservative-free & dye-free cupcakes are infused with a blending of pure vanilla, lemon and lavender extracts that brings out just the right balance of flavors where the taste buds detect a slight taste of each but without domination of any one particular flavor. Made with the same top-shelf ingredients but without egg and dairy, the dairy has been substituted with unsweet organic coconut milk, plant-based oil (no soy), and a dollop of plant-based sour cream* (made without any nuts). Then exquisitely finished with a citrus-infused buttercream frosting of lemon-lime or lime zested buttercream frosting made with organic plant-based butter and moistened with unsweet organic coconut milk; either marry well with the flavors in the cupcake.
