Sweet N Sassy Angel Food Cake - DAIRY FREE
Brand new and hot off the creation assembly line...... You asked for it and I did it - YEAH! This feather-light and delicate textured all natural GF, nut-free preservative-free, dye-free and DAIRY-FREE angle food cake is rich in pure vanilla flavor throughout. Cake contains very little GF flour with the majority of it being sorghum, and a wee bit of my hand-mixed GF mix; lots of egg whites and one lonely whole egg, a wee bit of sugar, and a good splash of pure vanilla paste. To my delight when the oven timer went off and I peaked in the oven, I breathed a huge sigh; "it looks exactly like the angel food cakes that I used to purchase BUT those had gluten in them.
This is a 10" cake (I will purchase some smaller size pans but for now, it's a large). There is no icing on it and it's not needed - just a nice spritz of non-melting confectioner sugar (and yes that is GF, too. Not all non-melting ones are GF and I am still baffled why.). Cake is shown with some strawberries and grapes - for photo color purposes.
I typically make a vanilla creme anglaise but something was nudging me to go chocolate. So..... I made a heavenly yet delicate chocolate creme anglaise with semi-sweet chocolate as my chocolate choice. Anglaise is a little lighter than a custard and spoons/pours well). I took a plain but yet quite enjoyable slice of cake and spiffed it up into a creme de la creme dessert; taste, texture, color contrasts and presentation - SPECTACULAR and yet not overly rich on the palate. I also topped it with some fresh strawberries (my berry of choice to go with angel food). It can either be served as a parfait, a slice with the sauce on the side and fanned with sliced strawberries, or turned into a Trifle and a vanilla creme anglaise. I hope I have titillated your taste buds and imagination.

You see, I don't have a tummy issue with gluten but decided back in 2012 when I stepped into this unknown world of GF baking and cooking, to make a choice and stay in this lane. I am smitten with the challenge and I can still be as creative with my creations. Actually, I'm much more creative on the gluten-free and vegan side and health-wise I do feel better. So, it's a win-win for me and hopefully for you, too.
