This simple flourless and soufflé-style chocolate cake is light in texture but packs a lot of flavor. It takes its name from the liquid chocolate center that when unmolded the gooey liquid chocolate “lava” comes pouring out. Made with unsweet cocoa and sweetened with with either Swerve®, a totally natural sweetener with erythritol and other natural flavors made from select fruits and starchy root vegetables or a blend of monkfruit/erythyritol, and/or Allulose (the less common sugar that the body does not absorb and like the others has no impact on blood glucose level). This unassuming cake can quite capably stand on its own or can be lightly dusted with another round of cocoa powder. Kick it up a notch further and serve it with a Keto-Friendly all keto-friendly natural and always seedless strawberry, raspberry-peach or blackberry fruit coulis. Now you’re talkin!
Because these are made fresh and will likely be shipped out or picked up, the cake is cooked a little longer and hence may not have the lava-style gooey center, as this would be a real gem to try and unmold and have it look presentable for you, the consumer. I will give it a test to see if this can be done so that there is some lava gooey center that the consumer may microwave (for a couple of seconds) and reinvigorate the lava to a warm gooey state.
