Enveloped inside this wonderful crisp and delicately sweet tart shell is the main event “pumpkin chiffon mousse” that begins with Sweetopia®’s homemade all natural maple pumpkin butter, savory mascarpone cheese (a staple in many Italian desserts), a wee skosh and blending of cinnamon, ginger, cloves, and a few other spices with a final gentle incorporation into a generous measure of billowy, whipped and sweetened cream. The end result producing just the right balance of delicately sweet crunch crust against a light, smooth texture, taste of delicate spices and not-too-heavy maple and pumpkin flavor.
