Lusciously-Good Fresh Lemon Square

This is Sweetopia®’s newest all natural GF & nut-free creation and it's a keeper! The base consist of my twice-baked vanilla shortbread crust and provides a wonderful crunch to the heavenly main event and filling that sits atop - all made with fresh lemon zest, squeezed lemon juice blended together with the egg, butter and sugar makes for a lusciously-good tasting lemon bar and overall excellent sweet. Absolutely NO lemon concentrate (the stuff in a bottle on the grocery store shelf that is anything but "real" or all natural. Just read the label! The square or bar needs no other finishing touch other than a generous dusting of confectioners sugar. This unpretentious sweet can easily be jazzed up to serve as a stunning dessert with an accompanying raspberry coulis drizzled on the serving plate. Average size is a ~3" square.
