Hoppin-Good Hobnail Cookies

This all natural, GF & nut-free, soft textured cookie is an adaptation of an old New England style cookie and infused with the essence of vanilla, slight citing of sweet cinnamon, and a generous portion of currants (dried black Corinth grapes). The final product before it's portioned and popped in the oven for baking is finished off with a generous roll in sugar crystals. Currants in this unassuming and perfectly textured cookie provide just the right level of sweetness. It's a perfect pick-me-up cookie anytime but especially when you're feeling you just "didn't come out quite even" after a meal and want a little something extra but not too heavy.
