Hummm..... where does this interesting cake get its name? Although a popular cake often seen and enjoyed down south this cake's origin is actually from the island of Jamaica (known there as the Doctor Bird cake) and named after the island's national bird "doctor bird", a Jamaican hummingbird. This Luscious, moist and medium textured all natural GF, nut-free is full of interesting ingredients that include fresh banana, desiccated coconut flecks, fresh pineapple tidbits, honey & butter toasted oats to mirror the texture and taste of nuts (traditionally included in a hummingbird cake), a pinch of nutmeg & cinnamon and a splash of pure vanilla. Cake shown above is dairy-free with cream cheese frosting. Cake contains eggs but no dairy products. Dairy has been substituted with organic unsweet coconut milk, organic butter substitute that is made with a vegetable oil blend (canola, Soybean, Flax olive oil, sunflower lecithin). And trying to stay true to the cream cheese frosting that is paired with the hummingbird cake, the icing is made with VioLife vegan cream cheese that in both taste and texture mirror the dairy-based cream cheese. Hands down you can not tell this cake is gluten-free or dairy-free. It is simply fabulous! For a 6" Double Layer Cake approximate serving yield is 6-9 servings . For a 9 " Double Layer Cake approximate servings is 12-16.
