So what makes bread so special? There's just something special that happens when you bite into a warm roll or slice of bread and slather it with a warm GF bruschetta, French butter with sea salt, honey, homemade jam or your choice of schmear) as it truly is an experience worth repeating over and over!
Sweetopia(r) has finally tiptoed into the world of yeast and is smitten with the challenge of making gluten-free, nut-free, preservative-free & dye-free bread and rolls that texturally excellent and with just the right balance of taste where you know it's a roll made with yeast but it doesn't knock you over the head it. Moreover, the roll and bread need to hold up in a frozen state and thawed where you can't tell the roll was ever frozen. Thus far, I have succeeded in all these requirements and have rolled out 2 excellent dinner roll varieties: one has a little honey added in it and milk, and the other no milk or honey added.
This variety of GF dinner roll is yeast based that has no milk or honey in the batter resulting in a lighter colored, very lightly densed and moist roll. It freezes well and thaws equally as well without any change in taste or texture from its original state. They are excellent anyway you wish to serve them - plain or a schmear of your choice. I find warming the thawed roll(s) ever so slightly (microwave at 10 seconds or 15 seconds on 50% power or popping them on a cookie tray and into the oven just after you've turned off and it's still warm for a few minutes, will work, too).
Rolls are standard cupcake size (! 3" round on top to 2" round at bottom) and are sold in half dozen. I will be ramping up my inventory of the rolls and breads for available sale. For now, I need 4 business days notice from time of order.
